Halloween Brownie Bites.

Makes about 9 dozen :)

Ingredients:
Vegetable Oil or Cooking Spray
6 oz. unsweetened chocolate, chopped
12 tablespoons (1 1/2 sticks) unsalted butter
2 3/4 cups sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
1 cup all-purpose flower
Pinch of salt
2 cups orange round sprinkles

Directions:
-Preheat oven to 350 degrees. Lightly coat the botton of a 9 inch square bakin pan or dish with cooking spray. Line the bottom with parchment paper, and set it aside.
-Melt chocolate and butter in a heatproof bowl in the microwave. Stir it occasionally until it is smooth.
-Put 2 cups of sugar and the eggs in the bowl of an electric mixer. Beat on medium-low speed until fluffy, about 2 minutes. Add chocolate mixture. Beat on low speed until combined. Beat in vanilla, then flower and salt.
-Pour batter into the prepared pan. Bake until a baking tester or toothpick comes out mostly clean, 30 to 35 minutes (do not over bake!) Let it cool in the pan until it is cool enough to unmold, 20 to 25 minutes. Turn out onto a sheet of parchment paper, inverting the pan of the brownies cool top side down. Peel off parchment paper, and let them cool completely.
-Heat up 3/4 cup of water and remaining 3/4 cup sugar in a small saucepan over medium heat, stirring until sugar is dissolved. Set it aside.
-Trim off the hared edges of brownie square. Scoop out one tablespoon of brownie, and roll into a ball with your hands, pushing the crunchy surface pieces into the center. Transfer to a clean work surface. Repeat to make brownie bites. Generously brush the brownie bits with the sugar syrup. Roll in round sprinkles (coat well) The brownie bites can be made up to 3 days ahead and refrigerated, tightly covered.
